English Peas

English Peas are also called Pod Peas, Garden Peas or Shelling Peas.  The waxy fibrous pod is not edible and must be shelled.  Snap off one end of the pod, unzip both sides and then shuck the peas into a bowl. They are best eaten right out of the shell or lightly cooked.

Shasta Gold Mandarins

Shasta Gold Mandarins have a relatively thin and easy-to-peel rind. The flesh is virtually seedless with an incredible orange flavor, almost like an orange popsicle. Very sweet with a high acid component.

Ruby Grapefruit

Ruby Grapefruits require high heat for the flesh to develop a beautiful pink blush. Earl’s Ruby’s are grown in the warm region of Coachella in Southern California. They are juicy, contain very little seeds, are easy to peel and available from November to March.  I love a simple salad of grapefruit and avocado drizzled with macadamia nut oil and chopped macadamia nuts.

Cocktail Grapefruit

Cocktail Grapefruit’s are not considered a grapefruit but instead are a pummelo-mandarin hybrid.  They can be as big as a pummelo to the size of a grapefruit.   They taste very sweet with no acidity and can have many seeds.  They can be found from November to April.

Cara Cara Pink Navel

The Cara Cara is also known as the pink navel. It is very sweet and usually seedless. The season starts in November and can go as long as March depending on the weather.  All citrus at the beginning of their season will be a little tart and the flavor will only improve as the sugars continue to develop.  By the time we reach January the Cara Cara’s will be at their peak flavor.  Earl’s Cara Cara’s are coming from Home Grown Organic Farms in Porterville, CA about an hour north of Bakersfield.
